The Best Fall Recipes

Summer is fun, but is there really anything better than snuggling up under a blanket and munching on some good food while binge watching your favorite shows or indulging in a great book, candles burning in the background?! No, there’s not. Don’t fight me.

Anyways, I have rounded up a few of my favorite recipes to eat as the weather cools down. If you don’t care, that’s okay. You can pretend, and then pretend you aren’t excited to try them after you read. Also- there are a few affiliate links in here because I like seeing the exact items people use for things… maybe you do, too.

Cranberry Jalapeño Dip

Ok, I cheat. I found this dip by mistake at Costco when I was throwing everything that I didn’t need into my cart last year, and have been buying it on repeat ever since. If you don’t have a Costco membership, (why?!) then you’re still in luck. Target also sells it! If you don’t have a Target, well, that is what Pinterest is for. Or this blog post.

Here ya go:

  • 6 oz Cranberries
  • 1 Jalapeño pepper
  • 8 oz Cream Cheese (softened)
  • 1/4 Cup Sour Cream

Mix it together and chill, then enjoy with your favorite crackers or pretzels!

Pumpkin Dip Recipe

Another one of my favorite chilled dips! It really does taste like a pumpkin pie.

  • 1 container of Cool Whip (unthawed)
  • 1 can Pumpkin
  • Pumpkin Pie spice to taste (or Cinnamon!)

Mix it together in a bowl and serve chilled!

I enjoy this one with Nilla Wafers or Graham Crackers.

Buffalo Chicken Dip

This is a great game day treat, holiday app, or perfect for a game night with friends.

Now the real question is- Do you want to be lazy, or fresh?

  • 3 Chicken breasts OR 2 cans of chunked chicken (easy.)
  • 8 oz Cream Cheese
  • 1 Cup Hot Sauce
  • 1 Cup Ranch
  • 1 Cup Cheddar Cheese

Cook on low for 3-4 hours, and enjoy!

(you can also cook in a casserole dish at 350 for 20 mins)

I think this tastes best with tortilla chips, but crackers or bread are also delicious with it!

Stovetop Chili

  • 3 carrots chopped
  • 1 medium onion –add to pot and cook until soft
  • 1 lb ground beef –add ground beef and cook
  • 1 can rotel
  • 1 bag frozen corn
  • 3 cans kidney beans
  • 1 can vegetarian chili
  • 1 can tomato sauce- add cans and cook 5 minutes
  • 2 tbs chili powder
  • 1 tsp cumin
  • 1tbs garlic powder
  • salt & pepper to taste
  • Tony Chachere’s Creole Seasoning to taste (if you like spice)- mix and cook on low until ready to eat

Serve with cheese, cornbread, tortilla chips, or whatever else you enjoy!

Chicken and Dumplings Crockpot Meal

  • 3 Chicken Breasts
  • 2 cups Chicken Broth
  • 2 cans Cream of Chicken Soup
  • Bag of Frozen Vegetables
  • Season with oregano, thyme, salt, and pepper to taste

Cook on high 3 hours, then add uncooked Pillsbury biscuits and cook for another 1 hour.

Chicken Bacon Ranch Crockpot Meal

This has recently become my husbands favorite meal that he asks for often- and it is SO easy!!

  • 1 pack of boneless, skinless chicken thighs
  • 1 bag of mini potatoes, chopped in half
  • 3 cans of green beans
  • 1/2 a pack of bacon, cut up
  • 1 packet of ranch seasoning (switch it up with spicy ranch if you like a little kick!)

Cook on high 4-5 hours or low 8 hours

Scoop into a bowl and thank me later!
